So many eggplants......

No time to talk! There's too many eggplants!


I got a deal so I scooped them all up....and now... so many eggplants.


And peppers! Look out, people! There's more salsa to be made!

What do you do with all of your eggplants? The only thing I could think of to preserve them was to bread them and freeze them for eggplant parmesan in the winter...

nice score! frozen ratatouille, eggplant lagsagna, tomato eggplant relish, babaganoush, eggplant rollatini (with your goat cheese (swoon)) oh the humanity!

Hi Tiny Gardener! what Dave said below..and yep i froze a bunch of the eggplant for quick and easy parmesan.

You said it, Dave! the parm was amazing - the goat cheese and fresh basil was incredible.
